Using the built in detailed monitoring tool in Steam Link I have the 2021 one that came out last week, and I am streaming at 1440p (using Nvidia DSR) with a Cat5e cable, it runs very smoothy, absolutely no macroblocking, artifacting, or stutter with 20MS response time. I am convinced the 2021 Apple TV is the best Steam Link device you can get.
I gotta say, I am pleasently surprised how well it works and the Fire TV stick isn't even officially supported. It has noticeable lag, sure, but for casual singleplayer games it's perfect. Steam link hardware is easier to use, obviously and good for older/simplier tvs. is big enough and hangs on the opposing wall from the window.
